Designed with both tradition and the modern world in mind, the solid-weld Russo is the best-selling Fontana Forni Gusto pizza oven with red paint. The oven heats up in only 45 minutes, is five times as efficient than traditional wood-burning stoves, and requires very little maintenance. Furthermore, the oven features cast iron doors for heat retention, and 304 stainless steel construction. The Russo is built into three distinct areas: a bottom compartment for wood storage, a fire chamber below for building your fire, and the oven proper to hold your forthcoming meal. Up to three removable racks can be placed in the Russo , which contains a convection fan for even heat distribution throughout the oven. Rock-based insulation, as of Summer 2014 an exclusive feature, resists the stresses of constant heating, then cooling, and will not break down over time like competing glass constructs. Convenience comes in several flavors with the Russo oven, including switch-activated interior lighting for cooking at night, a front-side damper to control your burn, an adjustable valve built into the stainless stack, built-in front timer and Celsius thermometer dials, and a fire poker to control your fuel. The door is sealed all around, and the bottom of the oven is a cooking stone that is certified for food contact. A second cooking stone can be placed on the rack for baking additional pizza, bread, fish, chicken, or whatever else strikes your fancy.
